If there’s one side dish that’s sure to be a hit at your next BBQ cookout, it’s mac n’ cheese. Impress your friends with this unique and tasty smoked mac n’ cheese recipe, tested and approved by our staff here at BBQ Island. Follow these simple instructions from Mark Crigler below to ensure you get the recipe mastered.
Ingredients:
1 [16 oz.] macaroni = 1 Tray
¼ cup butter
¼ cup flour
3 cups milk
1 [8 oz.] cream cheese
1 tsp. Salt
½ tsp. Black pepper
2 cups 3 spice Monterey jack cheese*
2 cups chipotle gouda cheese*
1 cup parmesan cheese*
Directions:
1. Cook pasta according to package instructions. In a medium sauce pan, melt butter and whisk flour into butter. Cook over medium heat for 2 minutes, until sauce thickens. Whisk in milk and bring to a boil. Cook 5 minutes until thickened. Stir in cream cheese until smooth, add salt and pepper.
2. In a large bowl, combine 1 cup chipotle gouda, 1 cup parmesan, and 1 cup 3 spice Monterey jack cheese. Combine mixture, pasta, and cheese’s in an 11 by 9inch pan. Sprinkle remaining cups of cheese on top of mac n’ cheese.
3. In the meantime, get smoker pre-heated to about 225 degrees, use mesquite wood chips to enhance the cheese flavor, and smoke for about 1 hour or until the top is golden brown.
