Ingredients:
- 9 lb pork butt
- Plowboys Yardbird Rub
- Smokin Guns Sweet and Heat Rub
- Clover honey
- Heavy Duty Aluminum Foil
- Spray Bottle
- Apple Juice
- Blues Hog BBQ Sauce
- Meat Thermometer
- Injector
Recipe Instructions
- Preheat your smoker to 225 degrees. Mix your injection with apple juice and trim excess fat from the pork butt. Inject the meat in a grid pattern and let it sit in the fridge for four hours.
- Remove the pork from the fridge, pat dry, and season with the rubs. Place the pork on the smoker.
- After 2 hours, baste with apple juice every 45 minutes. Once the bark is set, wrap the pork in foil with honey, rub, and apple juice.
- Cook until the internal temperature reaches 195-200 degrees. Rest the meat for an hour, then pull and mix with BBQ sauce.
