Score Big With These Sumptuous Snacks For The Big Game

There's no better way to enjoy the Super Bowl than by grilling up some outstanding appetizers for your friends and hosting a party for the big game. We've got some favorite recipes for you to try, all courtesy of BBQ Island's own Josh Dae. Fire up the grill and make a play for these tasty treats!

Chicken Wings

Ingredients:

  • Chicken wings

  • Your favorite seasoning rub - try the new Kosmos Sweet Honey & Pecan Rub or Kosmos Killer Bee Honey Rub with Chipotle

  • Wing sauce of your choice - we love Anthony’s Phoenix Wing Sauce

Directions:

  1. Heat grill to 275-300 degrees.

  2. Trim any hanging skin or protruding parts from wings. Rinse and pat dry.

  3. Season wings well with rub.

  4. Place wings on Big Green Egg for 20 minutes. Check skin for doneness and flip to allow the other side to brown. The entire process should take less than 1 hour to avoid overcooking.

  5. Enhance your cooking experience with a Vortex Thunderdome, which lets you take control of your fire by redirecting the flow of heat in your Big Green Egg and helps add a crispy skin.

  6. Remove wings from cooker and place in a large bowl. Make sure each piece reaches a minimum internal temperature of 165 degrees.

  7. Add sauce and toss lightly until coated.


Shrimp-Wrapped Sausage

Ingredients:

  • Precooked smoked sausage

  • Shrimp

  • Toothpicks

Directions:

  1. Heat grill to 350-450 degrees.

  2. Rinse, peel and de-vein shrimp.

  3. Slice sausage into half-inch pieces, then sandwich sausage discs between two shrimp. Hold in place with toothpicks.

  4. Place sausage and shrimp on cooker until shrimp is cooked pink, about 5-7 minutes. Serve hot.

Stuffed Mushrooms

Ingredients:

  • Fresh, whole mushrooms (white or brown button)

  • Smackers BBQ Rub

  • 2 packages cream cheese

  • 1/2 package of raw sausage

  • 4 Tbs. grated Parmesan cheese

Directions:

  1. In a skillet, cook sausage meat over medium heat, breaking the package into smaller pieces as it browns. Drain grease, remove from heat and allow to cool.

  2. In a large bowl, whip cream cheese and Parmesan on medium-high until well combined.

  3. Add sausage and continue mixing for about 1 minute. Set aside.

  4. Rinse mushrooms and pat dry. Remove stems.

  5. Use a spoon to fill mushroom caps with sausage and cheese mixture.

  6. Top with Smackers BBQ Rub for added flavor and color.

  7. Place mushrooms on cooker and cook over low heat until sausage and cheese mixture melts. Remove from heat and serve.
