Similar to other fruit trees, the wood from a Peach tree provides a slightly sweet and fruity flavor. Peach is not as heavy as oak or other hardwoods. In general fruit woods are on the acidic side so they act as a mild meat tenderizer. It's flavor is ideal for all white meats, fish and seafood. If you are going to use it on beef, pork or chicken add an equal of amount of Oak or Hickory. It is also common to use it to smoke small game birds such as Quail, Grouse and Partridges.
