Nine hundred and ninety-eight teams are registered for this year's 2011 American Royal. Known as the Talledega of BBQ, this year's Royal is bigger than ever. Mike, Shelton & Kurt are representing BBQ Island at this bar-be-que bonanza. We've been invited to cook with Chris Marks and the Three Little Pigs BBQ team. This team has won 8 American Royal Grand Championships, we will be cooking with royalty. To stick with the NASCAR analogy, we will be running with Earnhart this weekend. But we're not there as spectators, nope. Chris Marks has delegated the cooking responsibilities, and the BBQ Island boys were dealt the brisket card. Gulp...You got that right, it's the Big Boy meat at the Big Boy show. Chris insists that he teaches brisket the same way he cooks it at the Royal. Well, that's good, because it's the only way we know how to cook Brisket.
